Jointer set up question

I recently bought a used Jet jointer (JJ-6CSX) off craigslist and have been setting it up. I have the outfeed table set, the fence squared up but have a question about the blades. The outfeed table checks square and flat to the fence, using a one-way gauge base, no gap across the table perpendicular to the fence. When I set the blades parallel to the outfeed table, there is a pronounced "dip" between the jack screws, on the order of 0.003", with the knives parallel at the screws. Is this a knife issue? The jointer came with a new set of knives that I haven't replaced yet. I've been getting used to the jointer to figure out feed rate, hand pressure and all that, but the dip has me puzzled. This is my first jointer btw, so the help is appreciated.

Other than that, I've gotten the table and fence waxed, the knives are parallel to the outfeet table (at least at the jack screws) and the tables appear parallel (I need to get a better straight edge). Anything else to check? The jointer came with a new set of Jet knives and a mobile base, so if this dip isn't an issue, I'm happy.

That could be simple wear if the previous user did not move the fence around when doing edge jointing. 0.003" is actually not that much for wear. I guess I would try the newer set of knives to see if that dip disappears. I suspect that it will. If that happens you can get the original knives sharpened to get rid of that wear.

How did you arrive at .003"? If it is as little as you could simply joint the blades with a diamond or oil stone , by hand. (That is if I understand correctly what you mean by a "dip between the jack screws").
You really do need to have a reliable straight edge when setting up a jointer-otherwise it is just time consuming trial and error….
