I have not used the shop-vac idea but it looks intriguing. After a good day fishing. Wait, let me re-phrase that because any day fishing is a good day fishing. After a great day fishing, and I need to freeze fish, I fill the zip-loc back with cleaned fish and then submerge it in a bucket of water being careful not to let water get into the bag. The water pushes all the air out and when you zip it, you have an airtight vacuumed sealed back of fish ready for freezing.

With woodworking, and not wanting to take any chances on the wood getting wet, this shop-vac idea I think would work pretty well. Thanks or sharing.
