Not a big fan of cutting grooves.

How much movement is there (if you are holding the middle down – - how much is each side raised?)
If you glue in splines it will still move… just maybe a little less.

It is still wood and will always move. Once you have a finish on it (both sides) movement will be much less.

Since you are able to flatten the table with finger pressure = I would just pull it down with your clips.

Otherwise – will the client look under their “New” table and say WTF happened here?
