They peel part of the bark to see if it is really Bird's Maple
This looks like a regular load of Hard Maple saw logs. Many saw mills in Canada import Hardwoods like Cherry Hard Maple and Red Oak. Most are so large they could care less about finding Birdseye and probably don't look for that specifically. I bet there is close to 12,000 bf of Hard Maple on that trailer.
Not sure about those logs, but I had a call a couple years ago from a friend who knew I was always looking for deals on hardwood. Told me the freight train had just unloaded a pile of lumber that were used for spacers (dunnage, basicly) on the loads of pipe, etc. and they were just about half an hour from me.
Didn't know what to expect, but once I saw the pile, I was drooling.
Most were 4×4's, 8' long and about 75% heavily figured birdseye.
Loaded as many as I could into my Toyota 4×4, paid $1.00 each for them, raced home, unloaded and went back. By the time I got back there, two guys had bought the whole load, probably another 150. And got them for less because they took the whole pile.
I live about 5 minutes from one of those sawmills and they'll take anything, from anywhere. As long as it's hardwood they'll take it. My neighbour heats his house with your red oak. I try to scarf off any maple but I can't be particular. Maple is maple and I use it for jigs and fixtures. I'm trying to collect enough to make a worktop for my router skis.
