Well, Karson, That’s a pretty good place to learn. The only problem I have is that for 25 years I’ve sharpened my head knives and straight knives similar to the way he describes and I still wish there was some kind of jig to help get it right. I use a strop board like he does and clean up as well but I want a jig to get it right the first time.
