It seems to me that leaving a 3” over-hang to accept the rail is quite a bit (?)
I might cut that in half and leave 1 1/2” or 2”. Although that would depend on how much ‘under the bar’ leg room you want. If it will be primarily a “stand up” bar, you don’t need 9” overall.
Looks you have a handle on the rest… Bump up that granite where you need it.
