Start with a modest modern project. Upholstery is very
complex for traditional styles. In a recent conversation
with a designer of production upholstered furniture
she admitted there is no text how to do it. The 3
dimensional thinking must be developed through
experience. Tearing apart upholstered pieces is
useful for learning.

You might consider doing a chair with a slip seat.

There’s a pricey book on designing upholstered furniture
but it’s rather restricted to mid-century styles. I have
the book so I know.

That said, you can design and make any furniture piece
you want as long as you see it through, so persevere
and try new things.
