One of my hobbies is to produce cold cuts (sausage , ham, pastirma etc). As I live in Greece the perfect way to dry the cold cuts is with air. So I made a cabinet using wood from pallets. Now I m happy and my sausage are smiling inside the cabinet….I thing the next project must be homemade beer.

You are lucky you live on the other side of the world, or I would be right over! Beer and meat, ye ha! Yum!

Nice cabinet. So, you don’t smoke the meat?, just air dry. Interesting, never heard of that before. Enjoy the fruits of your labors.

When you have good company always beer and sausages are free, both in Greece and Italy. The sausages can be dry with cold smoke , boiled or air dry depending on the method of preparation. In planet earth all we are neighbors…
