Nice Work Derek. Had a look at the Post. Very Informative.
I have a Sabatier Chefs Knife that was a Reject from the Factory. 50 Years Old when I took the paper off. Split Wooden Handles weren’t lined up properly and the Tang was showing a bit.
I use it all the time. Easy to sharpen and you could shave with it!!
