I am from down under (NZ) as well,just getting started in this woodwork thing.
getting a few tools together and like you surched the net for wooden holdfasts.
Very elusive and hard to find, however I did find this, a Barilette, basicly it is a forked tree branch.Like a shanghi upside down, with one leg shorter than the other. They are used the same as a metal holdfast, and supposidly just as good.
