If anyone has any tips on iron on edge banding for plywood I would like to hear from you. I have had some problems in the past with adhesion and do not want to develop problems on this project.

You migh consider not using iron-on edge banding. Instead use glued on solid edge banding which is more durable and thicker allowing some edge machining if needed.
