Since I have many food allergies, wheat and potato are two of them, I sometimes come up with original recipes so I thought I’d share two I just came up with. I just sent them to Martha Stewart, don’t know if she will do anything with them but if anyone can get these recipes out to others she could. All I know is I just had my neighbor test the Fried Banana and I got, THAT’S SO GOOD, twice and this lady is not one for compliments. They are so easy to make too. Here are my recipes:
Fried Bananas
Ingredients: bananas and Gerber Organic whole grain rice cereal for
baby, oil and salt to taste.
Slice a banana for each serving about 1/4” thick. Get oil hot in pan. Take a zip-lock bag and put in Gerber’s Organic Whole Grain Rice cereal and toss banana pieces with the cereal. Keep tossing until the moisture from the banana pieces start to come through, keep tossing until moist again and repeat. Then fry these up until brown on both sides. The centers will be a melt in your mouth rich banana taste with a bit of a crunch.
Mock Fried Potato
Ingredients: banana, oil and salt to taste.
Cut the banana slices as in the first recipe but place on paper towel or other to dry and place in frig until banana pieces look dried out on surfaces. Get oil hot and drop in and fry on both sides and then salt. If cooked enough they taste much like potatoes.

Hey, cool! My body doesn’t do well on potatoes either, I’ll have to remember to try bananas (or maybe plantains) when I’m feeling like that potato texture.

That’s good that I put the thought on your mind. I can’t eat plantains, too hard for me to digest so the banana works out much better. The fried banana is much better with that rich banana taste and crunch.

My naturopath has me on a supplement – prescription quality, called Ultra Clear Sustain to heal digestive issues and this sugar is one of the main ingredients in it.

Hmmm… Any idea what kinds of sugars are in that?
Since I took up bicycling I’ve started to get more into the nutrition thing from the “how do I keep my body going when every calorie counts” standpoint. Even though all I’ve had time to do this year are lunchtime sprints, and an hour isn’t really enough time to have to start worrying about things like absorption rates and how usable the sugars are.
They tell me that the digestive system can absorb roughly 800 calories/hour resting and 250 calories/hour exercising, and if I’m buring 800-1000 calories/hour (circa 20MPH on a bicycle), obviously where those calories come from is a concern.
For those purposes, standard table sugar (sucrose) is actually pretty good, even though it breaks down into glucose and fructose molecules, it’s better than things which are high in fructose (which have to go in through your liver and back out to become usable, and generate all sorts of nasty low-density lipoproteins in the process), but I prefer things which are straight glucose or maltose or maltodextrins (which break down into glucose).
So I’m constantly keeping my eyes open for various forms of sugars that’d be useful for home made sports drinks and energy bars.

Dick, I wouldn’t do that if you are allergic to them. I sometimes can eat things in different forms like I can eat ground buffalo but not buffalo steaks because the steaks are harder to digest. When I’m allergic to something I can’t eat it in any form.

I’ve never had a problem when my wife makes Banana bread I can eat all I want, but if someone makes fruit salad, I can’t even stand the smell of it.

Wow, maybe you can have them fried. I know some people have told me that about tomatoes that they can eat them cooked but not a tomato off the vine.
