Tasmanian Eucalyptus Burl coffee table

This is my first table.

Amazed to see coffee table’s prices today, I decided to build one.
I’m inspired by retro tables like Kindney table, Danish design and Nakashima’s artwork.

This is a Tasmanian Eucalyptus Burl slab.
I want to create a coffee table like this one :

Now I will sanding with avrasive paper 50, 80, 120, 180 and 240.

Now I reflect about finish and protection.
But which is best protection for Tasmanian Burl Eucalyptus ?

Teck or Exotic wood Oil ?
Black Bison Wax ?
Bee Wax ?
Rubio Monocoat ?

It’s going to be used on a daily basis and will be in contact with water and alcohol.
I want a mat or eventually a satin effect because it will be a coffee table near TV.
I don’t like light reflection of TV on a glass effect table. So no full gloss varnish or shelac.

Any comments ? tips or somethings ?

I’m no finish/protection expertise, just wanted to say they are beautiful burl slabs.
