Oak rounds used as a table

I have some large oak rounds cut from a large old oak tree just cut down. 2 1/2 feet by three feet. 8 inches deep. Any information on how I should proceed. IE. How long do I let the wood dry out? is 8 inches too deep? How do I finish it? etc. New to this project and do not want to destroy a great round of oak.

Others have made these work but crosscuts have always split/cracked/disintegrated in my hands. I’ll be watching this thread to learn the secret of preserving “cookies”.
